Game Day Chili

My hubby asks me to make this a few times a year. Since tonight is the Super Bowl (go Pats), I prepared this classic winter dish, using my new pressure cooker that I inherited from my mother in law. My mind is blown at how quickly the flavors all come together!

Prep time: 15-20 minutes
Cook time: 6-8 hours (if using a slow-cooker); 15 minutes (if using a pressure cooker)

Veggies:
2-3 cloves of garlic- minced
1 onion – diced
1/2 bell pepper* – diced
1 can of beans (15.5 oz or similar) -drained and rinsed

Meat:
1-2 lbs of ground meat (beef, turkey, chicken, lamb, tofurkey – whatever you prefer)

Seasonings:
I usually kind of go crazy and add whatever I have, but the base I use consists of…
1 packet of taco seasoning
1-2 tablespoons chili powder
1 teaspoon garlic powder**
1-2 teaspoons onion powder
1-2 packets of the Goya Sazon seasoning
1 teaspoon Cumin powder
1 small can of tomato paste
1 teaspoon of paprika
1 dash of cayenne pepper (a little goes a long way)
Salt and Pepper to taste

Toppings (optional)
Shredded sharp cheddar cheese
Chopped scallions
A dollop of sour cream

Cooking Instrument:
My go-to has been a slow-cooker! This was due to nature of my lifestyle, working full time. All I had to do was fix it in the morning and come back to eati! So, that’s what I’m the most accustomed to using.

I have also been experimenting with my hand me down pressure cooker from my mother in law. I’m trying to come up with a few dishes for our summer camper road trips.

Another option is stove top:) I have tried this before, but it just isn’t as flavorful for my tastebuds.

Directions:
Brown ground meat on stove top in a large pan. Add all seasonings. Then sauté the onions and garlic until the onions are clear-looking.

Add everything into your cooking instrument of choice. Then add some beef or chicken stock or just plan water.

Serve plain, with chips, rice, veggies or whatever your heart desires!

Notes:
*Sometimes I will use a half a glass jar of salsa if I don’t have peppers in my fridge
**If you don’t have fresh garlic, just add more garlic powder
***I don’t like my chili to be too thick, so I tend to not add flour, but I have tried it before and you if you like thicker chili, just mix 1-2 tablespoons of flour with some water until it dissolves and then add it into the slow cooker a few hours into the cooking. If you’re using the pressure cooker, you can just add 1 tablespoon of flour as a thickening agent
